Probably you have never hear of it, but trust me, is delicious. I learned this recipe with a friend from Brazil, once in a while I make it as a quick snack for my girls.
Ingredients:
1 large egg
1/2cup of milk
1/2cup water (or more if you need)
3tbsp regular flour
2tbsp tapioca flour
2tbsp olive oil
A pinch of salt and pepper
A pick of herbs if you desire
Slices of cheese and han

Combine all ingredients in a bowl (except the slices of cheese and ham) , mixed well untill get all ingredients combine and the batter must be a little more running than regular pancakes.
Place the batter in a hot frying pan, no need cooking oil, you can do it think as a pancake, but I recommend a little thicker. Once the bottom is golden, turn the crepioca, add a slice of cheese and ham and fold it, let it fry until the bottom is golden, than turn again and let it fry for more 2 min.

Crepioca, made from tapioca flour and eggs, can be considered a gluten-free option compared to traditional bread. However, whether it’s healthier depends on your dietary needs. Crepioca is lower in protein and fiber than whole-grain bread, so consider your nutritional goals when choosing between them.
You can substitute the regular bread or toast once in a while, is a delicious snack that worth a try.
